New Year’s Eve, spectacular!
Looking for the best event in the best city in the world to celebrate New Year’s Eve? Look no further than CIRQ Bar & Lounge. With the world’s eyes on Sydney for the night of nights, one of the city’s most luxurious cocktail parties will be in full swing on level 26 of Crown Sydney.
Simply spectacular views of Sydney Opera House and Sydney Harbour Bridge provide a front-row seat to the greatest fireworks display. A unique blend of indoor and outdoor space creates a multitude of vantage points from which to enjoy the million-dollar views, while live entertainment reaches a crescendo with headline DJ duo Set Mo from 11pm.
“It’s where you want to be on December 31,” says Crown’s Culinary Director, Sarah Briegel. “The incredible views simply can’t be beat. From up there you can see Sydney from all angles and you’re part of it because of the outdoor space, you can almost reach out and touch the Sydney night sky.”
The same can be said for the delectable feast to be served. From 8pm until 1am, guests will dine on the finest produce from live stations and passed canapés.
As guests mingle and chat to the soundtrack of live music, they’ll be offered an endless array of globally inspired bites by waiters making their way around the venue. Taste the Asian influence of charred prawn, betel leaf, crispy onion & spicy lime dressing, be transported to Mexico with Ancho short rib tacos, avocado, pico de gallo and cilantro. Feast on 12-hour confit duck croquette with beetroot, goat cheese and macadamia.
“Everything we do at CIRQ is the best of the best,” Briegel says. “New Year’s Eve will even go beyond that, so expect the finest Wagyu, the freshest scallops and plenty of surprises.”
For the chefs of CIRQ, live stations are a welcome opportunity to chat with guests as they prepare bites fresh to order. At the beginning of the evening, stations will be laden with seafood appetiser delicacies before transforming into a wonderland of charcuterie and cheese. Imagine tables groaning under the weight of freshly shucked Sydney Rock Oysters, dressed in Pedro Ximénez Sherry Vinegar, Liquid Nitrogen Sorbet and citrus. Nothing says luxury like kicking off the evening with White Sterling Caviar, served on potato blinis with crème fraîche and chives. By the time guests are ready for dessert, the live station will reinvent as a liquid nitrogen sorbet producer, a feast for the eyes as much as the tastebuds.
“It’s the way to celebrate,” Briegel says. “Who wouldn’t love to start the evening with a kilo tin of caviar and a glass of fine Champagne? I can’t think of anyone who doesn’t love that. I know I do.”
Did someone say Champagne? To Crown Group GM of Beverage, Chris Crawford, it’s the hallmark of the festive season and the highlight of the CIRQ experience.
“Prepare to have all expectations exceeded as we ring in the New Year on what will be a beautiful evening at CIRQ,” Crawford says.
To whet the appetite, salmon-pink Champagne Veuve Clicquot Rosé will be served on arrival. The premium wine list will showcase Crawford’s award-winning favourites from around the world, from the Clare Valley to Provence. Expert mixologists will prepare delicious cocktails with surprising twists.
As the city lights up, so too will the bubbles. Waiters will serve free-flowing Moët & Chandon Luminous Edition from magnums that glow in the dark, the pinnacle of memorable celebration. As the clock ticks over to 2022, the party goes on.
