Woodcut provides Sydneysiders with a unique dining experience that celebrates Australian produce and cooking with wood, charcoal and steam. This concept was inspired by Ross and Sunny’s travels and the memories evoked by meals cooked in a slow wood burning oven or over an open fire, and the earthy flavours it creates.

Food Philosophy
Honouring elemental cooking methods
This latest chapter in Ross and Sunny’s career has become an evolution of dining and hospitality, heroing the cooking method in an elemental culinary experience. “With each ingredient we source at Woodcut I ask, “Where would this produce most flourish? Raw? On the ash grill? In the steam kettles? In the Romertopf? In the wood oven? On the wood grill?” It’s all about finding the best way to express the ingredient. Rather than manipulating the ingredient to create a composed dish the cooking method elevates it in its elemental state.”

Hickory Bar
Hickory Bar offers a boutique bar experience with an elemental ethos. Situated in the heart of Woodcut, Hickory Bar hosts a considered curation of beverages that tell the rich narratives of local ingredients and the dedicated suppliers who provide them.
Inspired by the philosophy of the restaurant, cocktails and mocktails are produced using traditional methods of steam, fire, smoke and ice, and alter seasonally, while a premium selection of wines, beers and sprits can also be enjoyed. Australian spirits hero on the base of every cocktail, including Woodcut’s bespoke gin with its smoked botanicals and charcoal infusion. Pull up a seat at the bar and take in the vibrant restaurant atmosphere or enjoy your drink with a side of harbour views on the outdoor terrace. No reservations required.

It celebrates both conventional and experimental methods, braided with the intent to find different and unique expressions of the terroir in which their hands toil. The list as curated by our Head Sommelier, Kyle Poole, showcases iconic wines and historical houses balanced with the unknown and upcoming game changers. Australian regional wines are heavily featured on Woodcut’s wine list however we will also highlight international favourites in addition to an extensive cellar list.

Nestled in between our Fire Kitchen, Seafood Counter and Pastry Kitchen, this luxurious event space is the perfect location for parties of up to 20 guests. This is one of Woodcut’s only indoor dining spaces that may be booked out for larger parties. With views, the theatre of the open kitchens and Tracey Deep’s magnificent woven hemp art installation, Yellow Box Dining is situated to provide your guests with an intimate dining space while enjoying the bustle and energy of the restaurant.

Alongside his wife Sunny, Lusted’s latest venture Woodcut has now launched as part of Crown Sydney’s highly anticipated gastronomical line-up. “At the heart and soul of Woodcut is fire, steam, smoke and ice. Acclaimed restaurateur and hotelier Sunny Lusted has launched her latest venture, Woodcut, alongside her husband Ross in Crown Sydney’s highly anticipated dining precinct. Following their award-winning venue The Bridge Room, Woodcut takes Sydneysiders on a new journey. “One of the most important elements of dining is how it makes you feel. We want guests to feel welcomed, excited by the buzz of the environment and theatre of the open kitchens, and most importantly we want our guests to feel at home at Woodcut.”
