At a’Mare, we celebrate Italy’s greatest loves: exceptional food and the joy of gathering around the table.

Inspired by the coastal charm of Italy and the beauty of Sydney Harbour, our menu brings together the best of both worlds: fresh Australian produce and timeless Italian recipes.

Under one roof, a’Mare offers three distinct ways to experience Italian hospitality: the refined a’Mare Dining Room, the vibrant and casual Pizza’Mare, and the aperitivo-led Vista’Mare bar. Each with its own personality, united by a shared spirit of warmth, flavour and la dolce vita.

Led by Chef Alessandro Pavoni, every dish is crafted with heart and heritage. Think handmade pasta, vibrant seafood and bold flavours, all served with a touch of tableside theatre and a cheeky smile. It’s fine dining, but never too serious.

Inside, the dining room offers warmth and intimacy, while just beyond, guests can take in the harbour air on our waterside terrace, perfect for a leisurely meal or a drink as the light shifts across the water.

a’Mare means “by the sea,” and that’s exactly where our inspiration comes from. Our menu is a love letter to Italy’s coastal regions, with fresh seafood, seasonal vegetables, and dishes designed to be shared.

From handmade pastas to seafood specialities, every plate is a nod to tradition through an Australian lens that keeps things light, fresh, and full of flavour. And yes, some dishes are finished right at your table, just the way Nonna would’ve done it (if she had a flair for drama).

Alessandro Pavoni

Chef Alessandro’s cooking is a tribute to his Italian roots and the memories that shaped him.

Alongside him, Executive Chef Giuseppe Fuzio, from Andria in Puglia, brings warmth, energy, and authentic southern Italian flair to the kitchen. His passion for flavour-driven, honest cooking shines through every dish.

With a deep respect for tradition and a passion for fresh, local ingredients, Alessandro and Giuseppe create dishes that are simple, soulful, and unforgettable.

VISTA’MARE SNACKS & SPRITZ BAR

a’Mare is proud to introduce Vista’Mare Snacks & Spritz Bar, your go-to destination for aperitivo, where Italian style meets Sydney’s waterfront. Intimate yet vibrant, the space is brought to life with a generous splash of la dolce vita.

Home to the iconic Campari Seltz Machine (one of only a handful in the world), it’s a little slice of Milan right here in Sydney.

The menu is centred on cicchetti, traditional small bites from Venice, similar to tapas or pintxos, perfect for sharing with a glass of wine. Explore Andrea’s bespoke cocktail list, including over nine Spritzes, and enjoy the flavours, the vibes, and a true taste of la dolce vita.

Settle into our newly refreshed bar, or step out onto the terrace to watch the world drift by.

Booking policy

Selection of a set menu is required for groups of 10 or more guests.

We take note of your table preference; however, table location is subject to change. Your seats will be held for 15 minutes post your reservation booking time. Should you wish to cancel or amend your reservation, please refer to your confirmation SMS or email.

The sale or transfer of this reservation is strictly prohibited.

Crown Sydney do not accept minors under 16 years old dining without a parent or guardian.

Group bookings

Reservations of up to 20 can be booked online. For bookings of groups over 20 or for private dining spaces, email groups@amaresydney.com.au or call 02 8029 0887.

Selection of a set menu is required for groups of 10 or more guests.

Cancellation policy

Credit card details are required to secure this reservation. No charges will be processed on your card at the time of booking. Should you wish to cancel or make changes, please refer to your confirmation SMS or email for simple adjustment options at least 12 hours prior to your reservation, or a cancellation fee of $50 per person will be charged to the card provided. For groups of 10 or more, we require at least 48 hours’ notice to avoid a cancellation fee of $50 per person.

Surcharge

A 1.15% surcharge applied for all credit card transactions. A 10% surcharge applies on Saturdays. A 15% surcharge applies on Sundays. A 15% surcharge applies on all Public Holidays (one surcharge fee of 15% if Public Holiday falls on a Sunday). An additional service fee of 10% applies to bookings of 10 people or more.
